First time at Macelleria? You’ll notice pretty quickly that we do things a little differently. There’s no waiter handing you a leather-bound steak menu. Instead, there’s a chilled glass display full of premium cuts – and you’re the one doing the choosing.
Here’s how it works.
Step 1: Walk in (no, really – no booking needed)
We don’t take reservations at Bondi. Whether it’s a long lunch, a post-surf feed, or dinner with the family, just walk in and our team will find you a table. Come as you are – sandy feet and all.
Step 2: Choose your cut from the counter
Head to the Butcher’s Counter and have a look at the display. You’ll find grass-fed steaks from the clean pastures of Tasmania, marbled Wagyu from the Riverina, and dry-aged cuts developed over 30 to 42 days for deeper flavour and tenderness.
Not sure what to pick? That’s what our butchers are for. Tell them how you like your steak – big and beefy, lean and clean, or something you’ve never tried before – and they’ll point you in the right direction. Rib-eye on the bone for the traditionalist. Fillet for the purist. Something with serious marbling if you’re celebrating.
Step 3: Tell us how you like it cooked
Blue to well done – no judgement (okay, maybe a raised eyebrow at well done). Your cut goes straight from the counter to the open grill, where you can watch our chefs work. That’s the whole idea behind Macelleria: total transparency, from the display case to your plate.
Step 4: Pick your sides and a drink, then relax
Round it out with sides and something from the bar – a cold tap beer after a swim, or a big Australian red to stand up to a dry-aged steak. Then find your seat and let us do the rest.
Not feeling steak? No problem
The counter is our heart, but the menu goes well beyond it — flame-grilled grass-fed burgers, wild-caught fish, free-range chicken and fresh salads. There’s something for every appetite at the table.
One more thing: the counter is also your local butcher
Here’s something plenty of people don’t realise – you can buy from the Butcher’s Counter to take home. Same grass-fed, dry-aged and Wagyu selections we cook in our kitchen, with our butchers on hand to help you choose and share cooking advice. Dinner party sorted.
